Tuna Salad

Since I'm on the subject of food today i'll talk tuna. The onion I dealt with earlier was left over from making tuna salad. Waste is a sin, no? Canned tuna was a major part of my diet for a very long time, and I have finally tweaked a tuna salad recipe that fits me.

Try finding a tuna salad sandwich without gross amounts of celery in it. I seriously dislike the texture of celery. Chopped very fine it's a lovely flavour. I am not gonna buy a whole bunch of celery to finely chop one or two stalks to make tuna salad. Be Real.

So: Into a medium large mixing bowl put:

One large handful of rolled oats If planning to serve on lettuce maybe two. Rolled oats make for chewiness and body. If serving on bread, make it a scant handful. If you're going to eat it straight out of the bowl because you want high protein nutrition, one good handful will do. Hey, this recipe evolved; it did not spring from my brow as did Minerva from Jove's.

1 can chunk light tuna
1 can solid albacore tuna

The different types of canned tuna is about mouth feel. If you don't care, it doesn't matter. These should be packed in water, unless you are feeding farm workers or are a jock. Dump the water into the bowl with them to moisten the oats. They can sit while you obtain the following:

.25-.325.c. finely chopped fresh onion(previous post covered heewack!successfully dealing with the onion left over from making this salad.)
12-16 neatly diced black olives

Have waiting: 1 diced hard-boiled egg (ican tell you how to make them without sulphur rings around the yolks, if you want to make pretty devilled eggs for a party. It's like long division--atrue algorithm I can't crack the basis of but works.)

Now the tough part: I use about equal volumes of mayonnaise and housebrand spicy horseradish mustard to which I always add some unknown amount of extra horseradish paste until it tastes right. I use mustard liberally, so this the common mustard once I get ynogh horseradish in it. So I guess you'll have your own opinion about mustards and use your own as you see fit. For those trying to eat: Housebrand brown spicy stoneground and horseradish are words to look for.

So I guess about four large forkfuls of each, but this is to your taste. Throw all this stuff together in the mixing bowl until it turns into a chunky pasty blob of the consistency you want. Then fold in the egg. It's protein and pretty.

There. Tuna salad with or without celery. Serve as you wish and get your protein. I usually eat it out of the bowl with a spoon. This a starving old person's sort of recipe. The cost of canned fish has doubled or tripled since I was 20.
